The Best Lemon Vinaigrette

You'll want to have this dressing on hand at all times for easy weeknight side salads and mains.

  • Blender or hand blender
  • Jar, for storage


  • 1 cup olive oil
  • 1/2 cup lemon juice, freshly squeezed
  • 1 large shallot, roughly chopped
  • 1-3 tbsp champagne vinegar (optional)
  • finely ground salt, to taste


  • Put all ingredients in a blender and blend until smooth. Adjust ingredients to taste as needed.
  • Store in the fridge for up to 3 weeks.
